Perfect Sponge Cake Recipe

Looking for the perfect sponge cake recipe? Look no further!

This recipe makes a cake equal to one 340g of commercial cake mix.

The only liquid called for in this recipe comes from the eggs; for best results, they should be at room temperature.

Ingredients

3 eggs
1/2 cup (110g) caster sugar
1/4 cup (35g) cornflour
1/4 cup (35g) plain flour
1/4 cup (35g) self-raising flour

Method

Preheat oven to moderate (350 - 375 °F).
Grease (and line) pan(s).
Beat eggs in small bowl with electric mixer until thick and creamy (this will take about 8 minutes).
Add sugar, 1 tablespoon at a time, beating after each addition, until sugar dissolves;
transfer mixture to large bowl.
Sift dry ingredients together three times then sift evenly over egg mixture;
fold in gently.
Spread into prepared pan(s).
Bake in moderate oven until cake is cooked.
Turn immediately onto wire rack to cool.
